Enterprise Support: The Butchers Daughter, Cashel

Una O’Dwyer is a second-generation Master Butcher, from a young age, she watched her father skillfully crafting meats in their family-run butcher shop in Cashel, Tipperary. Here her passion for fine artisan foods was born. She saw an opening in the market and created the brand “The Butchers Daughter”,  hand-crafted sausage and pudding produce made with premium Irish meats.

The introduction of this branded range “The Butchers Daughter” to retail and the scope to develop this branding nationally created a demand to enhance the business.  A processing facility and storage/dispatch and packing facilities were required to meet these needs. The expansion was critical to the growth and survival of the enterprise and the maintenance and growth of locally-based employment. The brand is now well established in the retail sector nationally. The timing of this LEADER grant aid expansion was vital, as the extra space enabled the promoter to remain open throughout COVID and work in a safe environment meeting the high market demand for their produce.
